My story

The world before Hey Paddock

From a family restaurant to a team of AI agents for hospitality. The decisions that worked, the ones that didn't, and what I take from each of them into Hey Paddock.

01From 16

Family restaurant

I've been in hospitality since I was 16. I started out in a family restaurant in Trenčín and was there when a former bistro was turned into a new place. It is still running today.

As a teenager, I was put in charge of the restaurant for a few weeks. For the first time I saw that a manager is often a mediator: resolving conflicts in the team and finding a compromise both sides can live with.

I also saw what happens when everything rests on one person: purchasing, the menu and payroll.

Without delegation, there is no time left for what matters.

It is the most valuable lesson I have, and I am still learning it.

What I take into Hey PaddockDelegation has to rest on a system, not on whether the boss remembers everything.

022010–2016

Automation studies

I have been drawn to technology since I was a kid. After a technical secondary school in Dubnica nad Váhom, majoring in electrical engineering, I went to Brno University of Technology. At the Faculty of Electrical Engineering and Communication I studied automation and measurement, followed by the follow-up program in cybernetics, automation and measurement.

What stayed with me is a way of thinking. When we find a recurring task in our businesses, we analyze whether it is worth automating, and if it is, we do it.

With AI, it is now worth automating even a task that comes up once a month.

What I take into Hey PaddockAnalyze a recurring task and automate it. Every Hey Paddock agent is built on this way of thinking.

032011–2024

First management role

In 2011, at 19, I took over a pub at a time when its closure was on the table. It was my first management role.

The original concept wasn't working, so we changed it fast. Instead of chasing new customers, we focused on the guests who were already coming. We adopted what worked in the Trenčín market and used our advantage: capacity for large groups. We managed to turn the place around.

The hardest periods always came when people left and I had to be a team member and the manager at the same time. That is the point where a venue starts to fall apart, so you have to prevent it.

The pub had a clear position. One Google review summed it up best:

“Cheap, but good.”

Google review

But its character was formed before my time and never matched what I want to build. That is why we sold it in 2024.

What I take into Hey PaddockA venue is most vulnerable when people leave and the manager has to cover for a team member too. That is why procedures and an overview of the team must never rest on one person.

04Since 2015

Partnership

Samuel Stehlík and I knew each other before we started doing business together. When Paddock came up for sale in 2015, I approached him. Samuel trusted my hospitality experience, and I trusted him as a partner who would bring everything else.

operations: hiring and firing, finance, cash flow, attendance and events

For years we complemented each other and learned from one another. Today we run everything together.

Our partnership works because we share the same values and the courage to make decisions others consider risky.

Samuel also runs the creative agency Fleck Lab, which does production, events, advertising, photo and video. Fleck is his brand; I joined it in 2025, when we brought the vParku building back to life together.

What I take into Hey PaddockA partnership works when responsibilities are clearly divided. Mine were operations and numbers, exactly the work the Hey Paddock agents take over today.

05Since 2015

Paddock and Pavlač

On 1 October 2015, Samuel and I bought Paddock, a café with a long history on Mierové námestie. We learned coffee from the ground up, with help from our first supplier, Kolektív. We still work with them today, now on coffee machine technology.

The original concept could not work. Capacity was small and the place depended on an owner working there alone. With a loan behind us, we went for a quick change and turned a smoking café into a non-smoking one. People around us tried to talk us out of it, but we saw how many guests turned around at the door, and where the trend was heading.

In our first winter, we set up a Christmas stand in front of Paddock with punch made to our own recipe. The Christmas market became a tradition.

  1. 2017Renovation with architects and a bigger terrace. Breakfast and brunch made Paddock one of the most sought-after places in Trenčín.
  2. 2017–2023For six years, the end of our lease hangs over us. After long negotiations, we rent three spaces in the neighbouring building at Mierové námestie 19, next to the Zlatá Fatima passage, and connect them.
  3. 1 Apr 2024After a rebuild that started at the end of 2023, we open a Paddock almost three times bigger.
  4. Oct 2025Paddock turns 10. The biggest share of the credit goes to the team that runs it every day.

Today Paddock serves a wide range of guests, from business meetings to family celebrations. Its atmosphere comes from the genius loci and from a way of running it that creates a calm, relaxed team. In 2019, the coffee magazine Kávičkári wrote that it is a place where all you can say is “wow”.

Alongside the café, I organized events for years at Pavlač, the courtyard of the building at Mierové námestie 17. In an almost derelict space we created Festival za Paddockom, Paddock market, an open-air cinema, concerts, theatre and events for non-profits.

500visitors at music nights

2,500visitors at all-day events

Every month in hospitality starts in the red until the fixed costs are covered.

Only revenue above that threshold turns into profit. The change of concept, morning brunch, Christmas markets and years of events at Pavlač carried us over that threshold. Without them, Paddock might not have survived its first years.

The events also gave rise to the belief that Slobodné pódium (Free Stage) is built on today: if you give organizers a fair setup, they come on their own. You don't have to invent events; it is enough to build a space the community will fill.

What I take into Hey PaddockWhether you get past the point where you only break even depends on small things that happen every day. They have to work even when nobody is watching.

What didn't work

Not every project worked out, and not all of them were in hospitality.

Decko · 2021–2023
In summer 2021 we opened Decko, a wine bar with Slovak wine straight from the winemakers. It started well, but at the outset we accepted too many compromises, mainly a small space and inadequate restrooms. In early 2023 we closed Decko at break-even. It taught me that what works should be developed and multiplied, and that the urge to do something new must not push you into concessions.
Jtrbot · my first digital product
Jtrbot was a crypto trading bot that I developed with Tomáš and later also with Juraj. Tomáš did the programming; I brought the idea and handled promotion and sales. The project caught a window of opportunity in the market and ended when the approach to alternative cryptocurrencies changed. It was my first digital product: distribution, support and looking after a community of users.
Stejdž · 2018–2019
Stejdž was an event space run by Andrej and Jakub; I contributed my hospitality experience. It became an alternative to the Lúč and Piano clubs and closed when its lease ended.
Pavlač · Mierové námestie 17
The most ambitious plan didn't work out either: saving a national cultural monument at Mierové námestie 17 through the Pavlač project. The building has 2,700 m², and at the time we had one café and an agency with a coworking space. That wasn't enough for a project like this.

From these endings I have one rule:

Decide fast.

When a project doesn't work after an honest effort, it is better to take a smaller loss and start again. What would work in another city may not work in Trenčín.

What I take into Hey PaddockJtrbot taught me how a digital product reaches people and how to look after a community of users. Decko and Pavlač taught me to decide fast. I use both lessons at Hey Paddock today.

Places others wrote off

Again and again, we go into places others have written off. When we have a clear vision, we can go against the prevailing opinion.

The Zlatá Fatima passage connects Palackého Street with Mierové námestie. People only walked through it, and it was lined with cheap shops. We bet that the space would change once we opened into it. We added a second entrance and large windows, and brought in greenery. Today the passage is also home to Fatty Patty and the Dobrota bakery, and we look after the space together.

People knew the building in the park as Markus, after the restaurant that was there for 20 years. Samuel suggested naming it after the place rather than the building, and that is how vParku (“in the park”) was born. The logo was designed by Martin Pyšný. Today the building is home to Fleck coworking, Attic Studio, Velice x Little Paddock and accommodation.

Today Samuel and I have:

4hospitality venues: Paddock on Mierové námestie, Velice x Little Paddock in vParku, Little Paddock in Nová Dubnica and in Zuberec

2Fleck coworking spaces: in vParku and Walk-in Fleck at Mierové námestie 17

1accommodation, Studio v parku

We no longer stand in our venues every day. Our managers run them together with Hey Paddock, and Samuel and I make decisions at regular board meetings. We built all of it without investors, from our own profits.

What I take into Hey PaddockRunning a venue on systems isn't theory. It works for us, and that is exactly what I want to show others with Hey Paddock.

082023–2026

The building in the park

In 2023 we didn't buy the building below the castle. We didn't have enough equity, and the seller wasn't willing to wait for a loan. Two years later it was up for sale again, and the second attempt worked.

In hindsight, that was a good thing. Had we bought it in 2023, there would have been no capital left for the bigger Paddock at Mierové námestie 19, whose rebuild started at the end of that year.

Success stories tend to underestimate the role of luck.

We had our share too. What matters is giving it chances and trying again.

  1. Sep 2025We get the keys to the building.
  2. 1 Dec 2025The coworking moves in while construction is still under way.
  3. 1 Apr 2026We open Velice x Little Paddock (@velice.gelato, @little__paddock), exactly two years after the new Paddock.

Upstairs there is a studio, accommodation and a meeting room.

The building came with a shipping container too. Together with the city, we turned it into Slobodné pódium (Free Stage), an open stage in the park. Since 1 November 2025 it has hosted around 20 events. It is run by the City of Trenčín, and anyone can book a slot free of charge.

What I take into Hey PaddockThe second attempt worked because the first one taught us what the bank needs and how fast we have to move. That is how we build Hey Paddock too: try, learn and go again.

09Our own systems

First systems

Automation has been with me throughout my working life. I kept spreadsheets for almost everything, and the first more complex system we built was the Paddock loyalty program, today Paddock Klub. Instead of stamp cards, we introduced cashback: a guest gets 5% off right away and saves another 5% as credit. The physical card has become a digital card in the phone. Paddock Klub has about 8,000 members and works in all four venues.

During covid, the system proved essential. It helped us adapt quickly to the restrictions, and our loyal guests stood by us.

Then more systems followed, ones we built for ourselves:

  • Cashflow: an internal P&L and cash flow overview for all venues, which we use for decisions at board meetings.
  • Planner: our first internal system for shifts, attendance and team payroll.
  • Digital menu: connected to the till, so guests always see the current offer. What is actually on sale is what is shown.
  • Paddock Soda: a game for Paddock Klub members. By playing, they collect Golden Bubbles and exchange them for drink vouchers.

Each of them solved one specific problem in our venues. Hey Paddock is the next step: instead of separate tools, a team of agents that others can have too.

What I take into Hey PaddockPeople use a system on their own when it gives them something. Guests carried the card because it saved them credit. Team members use Hey Paddock because it helps them get through their shift.

10Today

Hey Paddock

For years, the same questions weighed on me as an owner.

  • Did everyone show up for work?
  • Did the team finish their tasks?
  • Do they have the information they need for today?
  • Why did the new system fade away after two weeks?

Today I combine running venues with what I studied. Hey Paddock is a team of AI agents that keep an eye on these things for you, so there is time left for people and craft. We built it on our own venues. In the first 3 months, more than 40 venues adopted it, with more than 500 team members working with it. Invite-only for now.
